Description

Born from the careful selection of our Garganega grapes grown on hills; round wine, with mineral accents, exhibits a complex nose of tropical fruit. A warm, perfumed and mellow Soave.

Great matched with fish dishes, vegetable and fish cruditès. Pairs well with fresh and soft cheese and selected finger food.

Serve at 12°C.

Over-ripened Garganega grapes, selected and picked in the middle of October, in order to guarantee a major extractive content. An alluring Soave, born from a wise and long bottle ageing. It matches well with tasty dishes, combined with creams, vegetable pies, risotti, cheeses soufflée and white meats.

Manual harvesting by small crates during the second week of October. Destemming, cold

skin maceration in a closed press for 12/18 hours and soft pressing in nitrogen saturation at

low temperature. Free-run juice decanting before the fermentation. After the stainless steel

fermentation, the noble lees are preserved for 18 months by performing weekly bâtonnage.

TENUTA SANT'ANTONIO Vigna Monte Ceriani is the Single Vineyard of the Castagnedi family's Soave range. Characterized by a straw yellow color with greenish highlights, it has a citrus aroma, particularly of grapefruit and lemon. It has a fresh, long-lasting flavor and a finish with the delicate hint of bitter almond typical of Soave.

VINIFICATION

Destemming, cold film maceration in a closed press for 12/18 hours and soft

pressing in nitrogen saturation at low temperature. Free-run juice decanting

before the fermentation. After the stainless steel fermentation, the noble lees are

preserved for 6 months by performing weekly bâtonnage.

Producing a Soave DOC means to interpret non just the enological characteristics but first of all the essence that an enologist, like a sculptor, must extract from the grapes. And the essence of Soave is typicalness.

It is being a wine of the origins, of traditions. About the history of a territory. Between the aromas of white flowers and light straw yellow color, emanates powerfully a sensation of familiarity: each sip is a memory, something known and already lived through.

The first experiments to create Creaman were carried out in the 1990s. We strive to show how Garganega is able to produce high quality sparkling method

traditionally wine. We liken Garganega to beautiful

material, it just needs to be worked by experienced

hands to create clothes that are perfect for any occasion.
