Vinification
Manual collection in crates during the third week of September and
subsequent destemming. Fermentation in steel, with daily manual
fulling for 15 days, and subsequent aging in steel for 18 months.
Description
Ruby red color with good transparency and limpidity, luminous and
consistent.
On the nose emerge tones of small crunchy red fruits, such as
raspberry, wild strawberry and cranberry, then floral rosehips and
violet. Mineral and smoked hints, gunpowder and lava stone. Spicy
hints of black pepper in large grains and cloves. Notes of karkade
in infusion and a hint of rhubarb on the finish.
The mouthfeel is crisp, fresh and savory, accompanied by delicate
tannins and a nice play of juicy softness and pungent and bitter
notes.
