Our finest selection of Valpolicella is given a second fermentation in contact with the grape pomace from the Amarone, thus enriching its aromas, body and complexity.

We were so proud of our first “Ripasso” made with a selection of our best grapes, that we became the first family to flaunt the name on a label.

Bouquet complesso e avvolgente, ricordi di frutti di bosco, amarena, prugna, muschio, grafite, tabacco, note balsamiche, pepe nero e inchiostro

Aromi delicati e floreali, al naso sono marcati i profumi di lievito e di pasticceria.

VINIFICATION

Manual harvesting by small crates during the third week of September.

Destemming, cold film maceration in a closed press for 12/18 hours and soft

pressing in nitrogen saturation at low temperature. Free-run juice decanting

before the fermentation. After the stainless steel fermentation, the noble lees are

preserved for 6 months by performing weekly bâtonnage.

Glera

Sparkling wine with a fine and persistent perlage with a strawyellow colour. It has a scent of ripe fruit, apples and pears. It’ s an excellent

aperitif suitable for gatherings and parties. It goes perfectly with mixed

fish fry. 100% Glera. Night harvested.
