VINIFICATION
It is made as red wine, with a
maceration period of 8 – 10 days in
stainless steel vats. The wine is then
refined partly in barriques and partly
in Slavonian oak barrels, but only for 6
months, in order to maintain the
characteristic fruity notes of this
variety.

DESCRIPTION
It has an intense ruby red colour,
with pronounced and lively violet
lights while young. The bouquet is
clear-cut, decidedly fruity with hints
of raspberry and woodland fruits
while it is young; with maturity, the
bouquet develops more depth and
new sensations, becoming ethereal,
with more breadth yet individual at
the same time. The taste is wellbalanced and slightly tannic
combined with robust and consistent
body. It is smooth, round and fullbodied on the palate.

Pale straw yellow colour with golden
hints. The bouquet is intense,
supported by aromatic notes of
elder, fig leaves and grapefruit. Dry
with good body, pleasantly acidic.

Medium intensity ruby red color. The aroma is vinous, characteristic, pleasant and delicate, reminiscent of the fruits that ripen in the area: cherries, morello cherries and plums. The taste is dry, full-bodied, slightly bitter, savory and harmonious, captivating for the pungent note of ginger, typical in Nicolis wines. It is the ideal wine for the complete everyday meal, it does not weigh down, in the fast midday meal. Provocative but to be tried with eels and fatty fish, it has no equal with pizza.

climate. Trentino is one of the few
areas in Italy where the cultivation of
this variety has had good development
in dry and well-ventilated hilly zones.

The enologist’s job consists exactly in listening to the variety and the grapes answering the needs they express: in this case, a treatment which reproduces the technique of Ripasso.
The second fermentation – evoked by the name “Due” – corrects in fact any possible defect and leads to an excellent result.
