TASTING NOTES
Ot has an intense, brilliant ruby red colour, with violet lights which tend to fade with age. The perfume has distinct notes of sweet violet and ripe cherry, with slightly spicy notes of liquerice. Its moderate acidity, in addition to the balanced tannin, make this wine particularly harmonious and rounded.
Ripasso DOC Superiore...
This wine comes from a special vineyard, grown in an old marl quarry at 450m altitude, which we have converted
the cultivation of the vine.
Our Ripasso Superiore is characterized by aromas of ripe red fruit, light tannins and a long finish.
After a first fermentation in stainless steel tanks, towards the end of February the wine is fermented in contact with the Amarone skins for about 15 days. After this, the wine is matured in oak barrels and tonons for about 24 months, followed by a further maturation of 6 months in the bottle

Vineyard: an old limestone quarry located at 450m of elevation that we
converted into a regenerative organic farm. We use pergola and guyot
training system
Harvest: harvest by hand in mid September
Vinification: natural fermentation in stainless steel tanks, followed by 6
months in concrete vats.

Merlot was planted in the Orgno vineyard in 1978
as we wanted to see if our land, traditionally used to
produce white wines, was also able to produce red
wines of great quality. We were happy with the results: Merlot worked well in our area but we decided to
wait 10 years before releasing it on the market so that
it would reach the levels of quality that we demand.

The Calle vineyard was created in the 1990s
from cuttings from the vines in the Orgno vineyard.
It was the first vineyard the Fasoli brothers used to
for biodynamic farming. It takes its name from a
beautiful, peaceful hamlet, Calle, perched on the
hills close to the borders of the village of Illasi

Si presenta con un colore rosso rubino molto intensodai riflessi violacei. Il profilo olfattivo richiama note di frutti di bosco e more mentre al palato è ben equilibrato, con una moderata trama tannica.
