The memory of farm animals is very dear to our far
-
ming history. In particular, a large group of these
squawking birds, used to run around undisturbed in
the courtyard and among the vineyards. The repre
-
sentation of the goose in a double-breasted jacket
and tie is meant to symbolize the evolution of our or
-
ganic wine, which over the years has reached the re
-finement and elegance it has always sought. The but-tonhole flower is a Phacelia tanacetifolia, one of the
flowers that we plant in the vineyards following the
biodynamic method of green manure.
Finally, the “Goose Approved” logo expresses the ide-als of environmental sustainability and respect for the
terroir. Our goal is regenerative agriculture, beyond
organic.
COLOR
Vibrant ruby red.
AROMA
Red fruit jam and fresh red fruits with hints of
spices and pepper.
TASTE
The tannins and acidity combine with the fla
-vours of ripe fruit. This enriches the wines with
a final touch of softness. On the palate, the
wine is dry, smooth, well-bodied and balanced.
HARVEST
Harvest begins in late September. We pass
through the vineyards several times to ensure
grapes are harvested only when they are matu-re. Only the best grapes will be pressed.
WINEMAKING TECHNIQUE
A portion of the grapes are placed in crates to
be dried for 15-20 days, whilst others are cru
-
shed a few hours after being picked. The gra
-
pes that have been dried are fermented sepa-rately from those that were pressed fresh. The
fresh grapes are fermented in stainless steel
vats. The dried ones are left to ferment in wo-oden barrels. After 10-12 months the wine is
then bottles and left to mature for 5-6 months.
Data sheet
We produce more Borgoletto than any other wine
in our range. It is a great easy drinking wine that
expresses the character of our soil.
Medium intensity ruby red colour. The scent is vinous, characteristic, pleasant and delicate, reminiscent of the fruits that ripen in the area: cherries, morello cherries and plums. The taste is dry, full-bodied, bitterish, savory and harmonious, sometimes captivating due to the pungent ginger, a typical note in our wines.
The Valpolicella Superiore the red of the line Télos of Sant'Antonio was born in vineyards located in Monte Garbi, in the Veronese municipality of Mezzane di Sotto.
It is produced mainly with Corvina grapes and with Rondinella, Croatin and Osleta grapes, collected and selected only by hand in the second week of September. After soft pressing in the total absence of oxygen, fermentation takes place in stainless steel tanks at controlled temperature, without any addition of sulphites. Then the wine refines for 12 months in new and second -step French oak barrels.
“Like a statue the souls of which is concealed in the raw material: this is what this Cru is like, produced in a hilly area with a mainly calcareous soil.
A Soave Classico Doc in which one can recognize immediately the limestone: an easy material to carve, friable. Extremely pliable.
And like the most graceful works of art, the wine of such a terroir is gentle.
Its elegance is immediately perceivable with the nose, in a very fine bouquet of white flowers and white pulp fruit”.
DESCRIZIONE ORGANOLETTICA
Colore: giallo brillante con riflessi verdognoli.
Profumo: sentori di frutta matura e note floreali.
Sapore: pieno, minerale, avvolgente, di grande persistenza ed eleganza.
Due Veneto Rosso IGT: every sculpture has a double soul. One hidden in the raw material, the other moulded by the hands of the sculptor. With precise gestures and finesse he extracts the perfect beauty concealed in the material. In the same way, only with equal accuracy and finesse, a wine like Due Veneto IGT can be achieved. A product made from Merlot and Cabernet Franc variety which expects attention and pursuit of detail.
The enologist’s job consists exactly in listening to the variety and the grapes answering the needs they express: in this case, a treatment which reproduces the technique of Ripasso.
The second fermentation – evoked by the name “Due” – corrects in fact any possible defect and leads to an excellent result.
To perfect beauty carved with the grapes.
The material that enlivens the Perinato Soave Classico Doc is volcanic, like the hilly terroir where the homonymous vineyard has grown since 1990. So this wine is made without doubt a noticeable minerality , salinity and saltiness contribute towards moulding a bold Cru. Volcanic.
This wine is dedicated to the memory of our origins: Perinato is in fact the surname that our ancestors bore in 1600.
“Wines are like statues carved by the enologist working on the raw material which is their essence”.
