This wine comes from a special vineyard, grown in an old marl quarry at 450m altitude, which we have converted

the cultivation of the vine.

Our Ripasso Superiore is characterized by aromas of ripe red fruit, light tannins and a long finish.

After a first fermentation in stainless steel tanks, towards the end of February the wine is fermented in contact with the Amarone skins for about 15 days. After this, the wine is matured in oak barrels and tonons for about 24 months, followed by a further maturation of 6 months in the bottle

Soil: Hillside vineyards, located in an old qarry and the slopes around it, 400m above

the sea level and all facing south. The quarry was converted 10 years ago through

planting the first vines and nowadays is a green natural terrace overlooking the valley.

Training system: Guyot and Pergola “Veronese”

Harvest: The harvest starts at the end of September and the grapes are picked only

by hand. Only the best bunches are selected, a third of which is collected in small

crates to be dried (appassimento) for 20 days.

Winemaking: After a first fermentation in still thanks, in February the wine ferments

again in oak. In the barrels we add the skins of the dried grapes pressed to make the

new Amarone.

The ageing is in big old barrels for at least 24 months.

After bottling the wine is left to rest in bottle for at least 6 months before release.

Tasting notes: Intense red ruby color with light red brick glares. Ripe cherry and

dried plums aromas. Soft and velvety, with a light tannin, hints of spices and a textural

and intense finish.

Ideal pairing with red meat, medium aged cheese and with a classic dish of Veneto

tradition: “pasta e fasoi”
