PRODUCTION AREA: Vestenanova area, in the Veronese part of the Lessini Mountains in basaltic soils of volcanic origin at 300 meters above sea level
HARVEST: Harvested exclusively by hand in mid-October.
TECHNIQUE: Crushing by soft pressing with subsequent vinification in white. Coarsely filtered and bottled in April following the lunar calendar to obtain a naturally sparkling and dry wine after about two months.
ORGANOLEPTIC CHARACTERISTICS: Sparkling wine with a straw yellow colour, with a delicate aroma of citrus fruits such as grapefruit and lemon and white fruit such as green apple and white peach.
The taste is slightly acidic, with mineral notes that give the wine a particular sapidity and freshness.
