The vineyards that produce the grapes
for this wine are in Valle di Cavedine,
Cimone and on the Brentonico
Plateau, at an altitude of between 500
and 700 m a.s.l.
The different soils in the three areas
lend this wine an outstanding
complexity of aromas and a wealth of
flavours on the palate. The glacial soils
in the Valle di Cavedine and the
Dolomite limestone in Cimone give the
wine its intense crisp aromas and
minerality, while the basalt, wellstructured soils on the Brentonico
Plateau impart a highly persistent,
well-balanced palate.

DESCRIPTION
Pale straw colour with bright green
reflections. Highly complex nose with
distinctly aromatic notes reminiscent
of lime and bergamot, and more
delicate hints of elderflower and
acacia; detectable, but more subtle
spicy notes of sage and bay leaf. Very
rich on the palate, lusciously crisp
with great balance.
VINIFICATION
The must is quickly cooled and left in
contact with the skins for a few hours
to facilitate extraction of the aromas.
The grapes are then gently pressed to
separate the must from the solids. A
starter culture is then added to start
off alcoholic fermentation, which takes
place in stainless steel tanks at a
controlled temperature of 16 – 18°C.
All the processing stages are carried
out in such as way as to prevent any
contact of the grapes and must with
oxygen, so as not to oxidise the
delicate aromas of this grape variety.
The wine is left “on the lees” until the
time of bottling.

La storia di Cavit inizia nel 1950 quando alcuni viticoltori si associano con l’intento di valorizzare meglio
insieme i vini della tradizione trentina.
Data sheet
Medium intensity ruby red color. The aroma is vinous, characteristic, pleasant and delicate, reminiscent of the fruits that ripen in the area: cherries, morello cherries and plums. The taste is dry, full-bodied, slightly bitter, savory and harmonious, captivating for the pungent note of ginger, typical in Nicolis wines. It is the ideal wine for the complete everyday meal, it does not weigh down, in the fast midday meal. Provocative but to be tried with eels and fatty fish, it has no equal with pizza.
After aging in the underground cellars for three years, the Lessini Durello “Brut”, produced with Traditional Method, learns perseverance. The ability of being stable, continuous. Persistence. In the same way this sparkling wine is long lasting iwhich can be appreciated in the mouth for a certain creaminess of the bubbles, parallel to a mineral quality which evokes rock dust. These have medium length and “push”.
It releases at the end aromas with reminiscences of citrus and pineapple. The color is bright yellow, its perlage is thick and continuous. Complex aroma, of white wildflowers and white pulp fruit with a sweet trace of almonds and toasted bread.
The balance sculpted in a wine, this is the image evoked by the delicate aromas of tropical fruit of our Chardonnay Veneto Bianco IGT.
Its processing consists in fact in the utmost knowledge of the components, perfectly organized in a game of harmonies and proportions between acidity, softness and saltiness. The same balanced dialogue which describes the beauty of a sculpture which becomes a work of art.
A rich, elegant wine, full of personality: all this is the Due Veneto Bianco IGT wine. Result of continuous experimentation and research of the perfect blend. A work of art that hold the two provinces of Verona and Vicenza.
Ripasso
Valpolicella Classico Superiore
DOC
Our finest selection of Valpolicella is given a second fermentation in contact with the grape pomace from the Amarone, thus enriching its aromas, body and complexity.
We were so proud of our first “Ripasso” made with a selection of our best grapes, that we became the first family to flaunt the name on a label.
