Description
We were so proud of our first “Ripasso” made with a selection of our best grapes, that we became the first family to flaunt the name on a label. The Ripasso technique is grounded in peasant traditions that vary from family to family, but it is still a relative newcomer among Valpolicella wines. Nevertheless, it already ranks as one of our most popular and well-known classics. The second fermentation of our best Valpolicella Classico wine on the Amarone skins, creates an intriguing depth and aromatic complexity. Amarone lovers will find this reminiscent of their favorite wine, with the price and lower alcohol that makes it a perfect everyday alternative.
Tasting Note
A deep, bright ruby red in color, it is rich and intensely spicy on the nose, with notes of cherry jam, tobacco and black pepper. On the palate it is full-bodied yet elegant, with gentle, silky tannins and a very long finish.
Appassimento
The selected grapes are placed onto traditional Arele and then left to rest for minimum 110 days in a large dedicated open room, where a ventilation system mantains an elevated and constant air flow. During this period the grapes are constantly checked since we want to keep them perfectly healthy, without any mildew.

GEWÜRZTRAMINER DOC...
VINIFICATION The must remains in contact with the skins for a short time at a temperature of 5-6 °C to enable the aromas to be extracted. Special care is taken during the pressing stage so as to avoid the excessive extraction of colour. The must may also take on a typical copper colouring, which disappears spontaneously during alcoholic fermentation, giving way to a golden shade of yellow with slight greenish hues. After fermentation has been carried out in stainless steel at a temperature no higher than 20 °C, the wine is left to develop in tanks for 4-5 months before being bottled

Cimone and on the Brentonico
Plateau, at an altitude of between 500
and 700 m a.s.l.
The different soils in the three areas
lend this wine an outstanding
complexity of aromas and a wealth of
flavours on the palate. The glacial soils
in the Valle di Cavedine and the
Dolomite limestone in Cimone give the
wine its intense crisp aromas and
minerality, while the basalt, wellstructured soils on the Brentonico
Plateau impart a highly persistent,
well-balanced palate.

Questo vino è il frutto di un’attenta scelta dei migliori grappoli del vitigno Garganega, raccolti a mano nei propri vigneti in Monteforte d’Alpone (VR), terra del Soave. Dopo un lungo periodo d’appassimento (fino a marzo dell’anno successivo alla vendemmia), l’uva viene vinificata con passione da Stefano Posenato. Viene messo in vendita dopo un invecchiamento di tre anni in acciaio e l’affinamento di un anno in bottiglia.

The sparkling Müller Special Cuvée is made with the Méthode Charmat technique, known also as Metodo Martinotti, which is produced through the aging on the yeasts and a second fermentation into big stainless steel vats. This process enhances the subtlety of the varietal aromas. The grapes grown in hilly and mountainous vineyards in the Cembra Valley and Cavedine Valley are carefully selected before being processed.
