CONCEPTS
It represents the identity of our family and company at 360°. We are our Valpolicella Superiore. Strong and persistent character, all balanced by a disarming softness.
FEATURES
Corvina, Corvinone, Rondinella and Croatina
Very low yields (80q.li hectare) through bud selection in spring and plant thinning in August.
During the harvest, all the grapes are selected and picked by hand for a 40/50 day drying process.
Two years in barrique, the new 30%, and aging in bottle for at least one year.
PAIRINGS
Red meats and sausages are the ideal pairing, followed by aged cheeses.

Il vigneto si trova a circa 350 s.l.m. nella vallata storica della Valpolicella classica: Marano di Valpolicella. La selezione delle uve avviene su un vigneto di sette ettari con i vitigni storici: Corvina Veronese, Rondinella e Molinara. L’età media dei vigneti è di trent’ anni.

The enologist’s job consists exactly in listening to the variety and the grapes answering the needs they express: in this case, a treatment which reproduces the technique of Ripasso.
The second fermentation – evoked by the name “Due” – corrects in fact any possible defect and leads to an excellent result.
