and tie is meant to symbolize the evolution of our organic wine, which over the years has reached the re

finement and elegance it has always sought.The buttonhole flower is a Phacelia tanacetifolia, one of the

flowers that we plant in the vineyards following the

biodynamic method of green manure.

als of environmental sustainability and respect for the

terroir. Our goal is regenerative agriculture, beyond

organic.

Yellow with greenish tints.

TASTE

Fine perlage which is persistent on the palate.

Delicate bitter note which balances the slight

initial sweetness.

HARVEST

Grapes are harvested by hand in the middle

two weeks of September.

WINEMAKING TECHNIQUE

The grapes are separated from the stems and

pressed softly. The must is transferred into steel

vats where it is left to ferment for 10-12 days at

15-17° C. The second fermentation is carried

out in autoclave for approx. 60 days following

the Charmat method. Once the fermentation

is complete, the wine is left on the lees for

10 days with daily batonnage to enhance the

body and aromas
